That’s not a cake

Under this delightful almond display lies my first ever Dundee cake, and the first cake I have baked all by myself (I had to lock the elf in a cupboard). I turned to Delia for some inspiration and she didn’t disappoint. The recipe was relatively easy – lots of fruit, some flour, egg and butter, and then cook for a couple of hours.

The cake is not as rich as a posh fruit cake, but I think I prefer it like this. The only disappointment was a hint of over-baking.  Delia said cook for 2 1/2 hours – I went for 1 3/4 hours, but should have gone for 10 minutes less.
